Late with my Christmas cards

It’s Friday and Christmas is on Tuesday next week. I just walked to my mailbox and dropped off 2 Christmas cards. I hope they’ll arrive at their destinations by Monday at least! Hehe, otherwise my friends, one in Georgia and the other in Utah, will receive their cards after Christmas!

I don’t know how it was that I missed them totally from my Christmas list this year. Doug did all the writing and mailing, and I just gave him my list. Better late than never, eh! I have received many cards after Christmas and some even came after the New Year!

Doug is sending out our Christmas newsletter via email to several friends especially those living overseas. It is a bit late to be sending them any cards right now, and we don’t have the mailing addresses to some of them. That reminds me, I need to email my Christmas newsletter to my friend in Holland! She emailed me some weeks ago informing me that she’ll be expecting her first baby in February.

Looks my Christmas mailing is not done yet! :wink:

Christmas Tree 2007

Our Christmas tree is finally up. Doug bought the tree at our local supermarket on Thursday evening and we didn’t get around to decorating it till Friday evening. We used to buy our trees from the Boys Scouts Christmas Tree Lot but this year I just couldn’t resist the $20 price tag on a tree that is about six feet tall!

I think I need a lot more ornaments with which to decorate the tree. Initially I thought of only using two colors for the decorations. blue and silver or red and gold. That would mean I’d need to get lots of new ornaments. Forget it, I am not ready to spend that much on new ornaments! :-)

This year as in the past two years, I strung the lights up and down instead of going round the tree. This method of stringing the lights makes it a lot easier to put up and take down the lights.

I love the smell of pine in the house!

Thanksgiving Dinner

I outdid myself at this year’s Thanksgiving dinner! :-) I am not a very good cook but I can be inspired.

I saw oysters at the Galt Market and thought how nice it would be to have oysters too at the Thanksgiving dinner! So I bought a dozen. I wished I had bought 2 dozens instead, because Doug and I loved the baked oysters we had at the Thanksgiving dinner.

I bought a small turkey and it took about 3 hours to bake, and it turned out really nicely. I used a Jamie Oliver recipe and I really like the stuffing that was place under the skin of the breast. It made the meat moist and tasty.

I used the new tray that my mother-in-law gave me. The turkey was placed on a rack and the pan below it collected all the drippings. I put sweet potatoes, tomatoes, onions, and carrots in the pan. Very tasty vegetables! After everything was done, I scooped everything out into a bowl, left some of the drippings there and put in asparagus and green beansa! Wow, tasty! :-)

I also made Irish potato casserole and my mother-in-law said it was very tasty. I don’t know how it was that I missed taking a picture of it!

I also did roast beef, very well covered with cracked pepper corns, and it turned out very nicely too!

It was indeed a Thanksgiving feast! Yes, I thank God for all the delicious food we take for granted, our home, our family, our health and the every day blessings of life.
